Number 1: this cookie brittle is crunchy, delicately sweet, and completely addictive. Everyone who tries it LOVES it, and cannot stop eating it.
Number 2: cookie brittle is an utterly satisfying sweet treat that you can make in minutes. Minutes, I tell you.
Bonus: we went ahead and made this cookie brittle vegan and dairy free!
Unlike a traditional chocolate chip cookie that’s soft and chewy, cookie brittle is crunchy and rich. Don’t get me wrong, long live the chocolate chip cookie (I mean, this dairy free chocolate chip cookie recipe is AMAZING and we make it on repeat in our house); this cookie brittle is something entirely different, addictive, and delicious. I never knew I could love a crunchy chocolate chip cookie so much, and that’s something, because I’m a forever fan of the classic.

The cookie base to this cookie brittle reminds me a lot of buttery shortbread with more crunch to it, which is pretty cool, considering it doesn’t have any butter in it at all.
Fair warning: this cookie brittle is absolutely addictive. If you’re trying not to sneak bites of cookie brittle all day long, might I advise sharing these as fast as you can. 🙈
How to Make Vegan Chocolate Chip Cookie Brittle
This vegan cookie brittle recipe is so simple. All you’ll need is a few simple ingredients—fewer than any chocolate chip cookie recipe out there — and almost certainly are already sitting in your pantry.
What You’ll Need:
- 1 cup canola oil*
- 1 cup sugar
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 2 cups all-purpose flour
- 1 cup vegan chocolate chips (i.e., Enjoy Life Dairy Free Vegan Chocolate Chips or Nestle Toll House Allergen-Free Semi-Sweet Chocolate Morsels)
Note: If you don’t need to make this cookie brittle vegan or dairy free, you can use butter, melted and cooled slightly, instead of oil. I found that the vegan butter didn’t taste as good in this cookie brittle, while oil works beautifully.
To Make The Vegan Cookie Brittle:
Making this treat couldn’t be easier.
For starters, you’re going to want to line a rimmed cookie sheet with parchment paper and pre-heat your oven to 350º F.
While your oven is heating up, you’ll whisk together the oil, sugar and vanilla together until it forms a paste-like consistency.
Next, you’ll stir in the flour and salt until it forms a thick dough. Last but not least, you’ll stir in your chocolate chips (and toasted pecans if you like that addition!)
Now the fun part: press the cookie dough into your parchment-lined rimmed cookie sheet. (My kids loved helping to smush and flatten the dough into the pan.)
Put the cookie sheet into your preheated to 350º F oven and bake for 20 to 25 minutes, rotating the cookie sheet at around the 10-minute mark. When the top is lightly golden, pull your sheet pan cookie out of the oven.
Allow the brittle to cool completely. Once your sheet pan sized cookie is cool, you can lift the parchment paper by the edges and transfer it to your counter top. And then you just break the sheet up into pieces. (My kids also LOVED this step!)
Store your cookie brittle in an airtight container for up to a week (if it lasts that long!) and just try not to eat it all in one sitting. 🙈

Customize Your Cookie Brittle
You can totally play around with this cookie brittle and make your own variations and costumoizations, so long as you don’t exceed around 2 cups of mix-ins (otherwise, you’ll wind up with a pretty dry cookie).

- chopped pecans, toasted
- chopped walnuts, toasted
- chocolate chunks

- dried cranberries
- dried cherries
