Since we’re still well into soup season (which basically extends from fall through spring … at least in my cold, Miami-born world), and yes, it’s still pretty darn chilly here in Boston, I’m sharing a whole new round of 16 hearty and delicious vegetarian soups.
I love a go-to vegetarian soup. I regularly make our favorite Copycat Trader Joe’s Vegetarian Harvest Chili and this Protein-Packed Tomato Soup (with grilled cheese sandwiches when Im feeling wild!) I’ve been looking for a few new easy vegetarian soups to add to our weekly dinner rotations, and goodness did I find a few winners.
