Ever on the quest for yummy dairy-free desserts for our family – our oldest Scarlett can’t have any dairy – lately I’d been dreaming of donuts that we could make at home. Fast forward several batches of vegan baked donuts made by trial and error (as evidenced by my Instagram Stories over the last few weeks), and here we are today: presenting the YUMMIEST VEGAN VANILLA DONUTS.
Light and fluffy, moist, and SO GOOD, I’m sharing exactly how to make the yummiest vegan vanilla donuts. They bake up to donut perfection, and then of course, you dunk them heavenly vanilla glaze and top them with sprinkles and goodness, what’s not to love?
Now, of course, your typical donut is fried and more often than not, made with dairy; but I’m telling you, swapping out the dairy for dairy free alternatives, skipping eggs, etc., and baking these beauties to a perfect golden brown, WORKS. It really, really WORKS.
And, baked donuts are MUCH simpler to make than a traditional fried donut, so it’s the kind of dessert you can make in your own kitchen any time you want a sweet treat.
Both kids and grownups alike will love these vegan vanilla donuts, and frosting and decorating the donuts is extra parts fun for kids. My girls actually helped me with every step of these donuts and it was so much fun to bake together. You can also experiment with frosting flavors, colors, and sprinkles.
How to Make The Yummiest Vegan Vanilla Donuts
To Make Your Own Vegan Donuts, You’ll Need:
- all-purpose flour
- baking powder
- baking soda
- sea salt
- sugar
- unsweetened non-dairy milk (i.e., coconut milk, almond milk, cashew milk, or soy milk)
- apple cider vinegar
- vegetable oil or melted coconut oil
- vanilla extract
- vegan sprinkles (optional)
The Steps for Making Vegan Donuts are Simple:
You’ll start by pre-heating your oven to 375 degrees Fahrenheit and spraying 8 wells out of your two donut baking pans. Fill the remaining empty wells with a small amount of water in each. This will ensure that the donuts bake easily.* (Most donut baking pans have 6 wells, but I found that I needed to divide the batter into 8 wells for the perfect-sized donut, thus the need for two pans.)
In a medium bowl, sift together the all-purpose flour, baking powder, baking soda and sea salt.
In a separate bowl, add the unsweetened non-dairy milk and apple cider vinegar, whisking together well and letting it sit aside for 2 minutes.**
Next, add the sugar, oil, and vanilla extract and stir.
Stir in the dry ingredients until just well combined.
Spoon the batter into a plastic ziploc bag (or piping bag).
The photo above shows my trick for filling a ziploc bag or piping bag.
Basically, I like to put my piping bag, point side down, OR ziploc bag with one corner down, into a tall plastic or glass cup, and filling the bag that way. The cup helps to hold the piping bag upright so that you can easily fill it with batter, so that the bag doesn’t keep slumping down.
After filling your plastic bag, cut the tip and pipe the batter into your prepared donut pan(s).
Bake donuts for 16-18 minutes or until golden brown and allow them to cool for 5 minutes.
After that, turn them out onto a cooling rack so that they continue to cool completely.
Once cooled, dip in prepared vanilla glaze*** in a shallow bowl that is wide enough to fit a donut, top with sprinkles (optional), and enjoy!
These vegan vanilla donuts are best stored in the refrigerator because of the glaze. They typically last up to a week if kept in an airtight container.
NOTES:
*Any time you make in muffin/cupcake tins or donut pans, etc. and you don’t fill all of the wells with batter, be sure to fill the empty wells with a little bit of water (less than a 1/4 cup), that way when the pans filled with batter bake, everything bakes nice and even.
**To make the donuts light and fluffy (and still vegan), you’re essentially making your own non-dairy “buttermilk” using unsweetened non-dairy milk and apple cider vinegar.
***For the vanilla glaze, either make your own simple vanilla glaze (see below) or melt store-bought frosting in a shallow glass bowl in the microwave at 15-second intervals (i.e., mocrowave frosting for 15 seconds, stir, repeat, until frosting is melted and smooth.)
EASY VANILLA GLAZE:
- 2 cups of powdered sugar
- 1 tsp of vanilla extract
- 1-2 Tbsps of non-dairy milk (add more, 1 Tbsp at a time for desired consistency)
Simply mix all ingredients together and adjust powdered sugar to get your desired glaze thickness.
