The best and most unbelievably perfect dairy free sugar cookies, filled and topped with Lucky Charms marshmallows, plus a soft, thick, and chewy interior; these festive pillowy sugar cookies are a deliciously adorable recipe for a St. Patrick’s Day treat.
You guys, I am SO excited about these adorably festive Lucky Charms sugar cookies!
Basically, we adapted our favorite soft and chewy dairy free sugar cookie recipe to make room for Lucky Charms marshmallows! These classic sugar cookies are totally dairy free, they bake up soft and pillowy, thick and chewy, with crisp edges, and this recipe results in the same classic sugar cookie, only it’s studded with everyone’s favorite Lucky Charms marshmallows. ‘Tis the season after all!
And let me tell you, as if these standalone dairy free sugar cookies weren’t already delicious enough on their own (seriously, we tested out so many sugar cookie recipes before deciding on our ideal sugar cookie made without the dairy), the addition of marshmallows takes these “magically delicious” cookies to the next level.

Lucky Charms Marshmallows
You have two options here for getting those marshmallows:
- Sort through a big bowl of Lucky Charms cereal, pick out the marshmallows and set them aside in their own bowl to be used in the cookies. We actually went with this method because it was a fun little project for our kids. (The girls even color sorted the rainbow-colored marshmallows into several bowls, making it a simple and fun learning activity for them!)
- Buy a big bag of just the marshmallows. (We’ve used this brand on Amazon before. They’re super yummy, just not quite as big and colorful as the traditional Lucky Charms marshmallows from the boxed cereal. You can see them on this cake from our backyard bohemian festival party.)
Dairy Free Lucky Charms Cookies
These cookies are also unbelievably EASY to make. They come together in one bowl, no chilling required; and the result is one perfect classic sugar cookie every single time.
What You’ll Need

How to Make Dairy Free Lucky Charms Cookies
To make these dairy free Lucky Charms cookies, you’ll start by preheating your oven to 375 degrees Fahrenheit and lining two baking sheets with parchment paper or silicone baking mats.
Next, in a large bowl, cream together vegan butter (Earth Balance is by far our favorite vegan butter for baking) and sugar for about 1-2 minutes using a handheld mixer or in the bowl of a stand mixer. Mix in the egg and vanilla, scraping the sides with a spatula as needed to be sure everything is well incorporated. Set aside.
In a medium sized bowl, add the flour, baking soda, cinnamon and salt and whisk to combine.
Add the dry ingredients to the wet ingredients, and then add the vinegar (or cream of tartar). Stir all ingredients to combine. The dough will be quite thick and not too wet; that’s perfect.
Mix in the Lucky Charms gently.
Roll the dough into cookie balls, about 2 tablespoons of dough per ball. (You can also use a cookie scoop to get even dough balls and then just roll them each in your hands a bit to make the balls.) Repeat and place the dough balls on parchment-lined baking sheets.
Bake one sheet at a time in the pre-heated oven for 11 minutes. When you pull the cookie sheet out of the oven, gently press a few more Lucky Charms Marshmallows on the top of each cookie (while the cookie is still hot).
The cookies will be very soft straight out of the oven. So allow them to cool for about 10 minutes on the cookie sheet and then transfer to a wire cooling rack. Repeat with the second sheet while the first sheet of cookies is cooling.
Enjoy!
Cookies will keep for around 5 days in an airtight container (we have and love airtight cookie jar) at room temperature or stored in the refrigerator.
That is, if they last that long!
