The bars have a decadent shortbread base, a layer of sweet and jammy blueberries and blackberries, and a buttery, crumble topping. These portable and delicious double berry shortbread crumble pie bars are perfect for your next brunch!
It’s no secret that I’m a huge fan of fruit crisps and crumbles. The combination of juicy cooked down fruit and that buttery, crumble topping makes for the perfect dessert in my book. Turn that fruit crisp or fruit crumble into portable pie bars (with a shortbread cookie base) and goodness, I’m all for it!!
These blackberry and blueberry pie bars are most definitely the best of both worlds – they have a shortbread cookie base, a layer of sweet cooked-down jammy fruit, and a standout crumble topping.
They are also the perfect thing for either a sweet treat at a breakfast or brunch party or any reason at all for a decadent fruity dessert.

These blackberry and blueberry pie bars are the epitome of a simple fruit-filled dessert. They are easier to eat and share than the traditional pie, and make great use of the fresh blackberries and blueberries. Though frozen works as well! The combination of juicy berries, shortbread crust, and sweet crumble make for a delicious and uncomplicated treat.
These double berry shortbread crumble pie bars are easy to make!
The best part about these pie bars is that they’re surprisingly simple to make.
Also, the shortbread cookie bar base doubles as both the base and the crumble topping. Basically, once all of the dough ingredients are incorporated, you’ll set aside about a ½ cup of the dough to use as the crumble topping. The remaining dough gets pressed evenly into the bottom of your prepared pan, becoming the cookie base. After that, you toss together the fruit filling ingredients, and then you sprinkle the remaining dough, kind of like wet, crumbly sand that you can easily squeeze and scatter in big crumbles over your shortbread cookie and fruit layers.
So, the result is three beautiful layers that bake together beautifully.

Blackberry and Blueberry Pie Bars
What You’ll Need
For the Crust & Crumbs:
melted unsalted butter
light brown sugar
sugar
vanilla
flour
baking soda
salt
cinnamon
For the Filling:
sugar
salt
cornstarch
blackberries
blueberries
To Make the Pie Bars
Preheat oven to 350 degrees F and line an 8-inch square baking pan with parchment paper. Whisk together melted butter, sugar, brown sugar, and vanilla until combined.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Add to the butter mixture and fold in until all of the ingredients are incorporated. Set aside ½ cup of dough to use as the topping. Press the remaining dough evenly into the bottom of your prepared pan.
Bake the crust for 14 to 16 minutes, until lightly golden and set. Transfer to a wire rack and cool for 15 minutes.
To Make the Berry Pie Filling
In a medium bowl combine sugar, salt, and cornstarch. Add the blackberries and blueberries and toss gently to combine.
Spoon the berry mixture evenly over the cooled crust, making sure to cover it all the way to the edges. We want every piece to include that delicious berry goodness. Crumble the reserved dough over the berries.
Bake for another 40 minutes, until topping is golden and the filling is a bit bubbly. Cool completely in pan on a wire rack. Carefully lift the parchment out of the pan and place the bars on a cutting board. Cut them into strips or squares with a sharp knife.
*You can alter the ratio of blackberries and blueberries – or any other berry for that matter – so long as the total amount of berries equals about 2 ¼ cups.
