Chocolate Chunk Corn Flake Cereal Cookies

Take classic chocolate chip cookies up a notch and make these irresistible chocolate chunk corn flake cereal cookies. Studded with melted chocolate chunks, flecks of crunchy corn flakes cereal, and layered into buttery cookies that are delicate and chewy on the inside with the perfect crisp edges, these unique cookies are an instant crowd-pleaser. Bonus: they can also be made dairy free!

Any time I get the hankering to bake something, my mind typically jumps to homemade cookies. Our kids are obsessed with cookies, and pretty much always request them over any other dessert, and I love that they’re simple to make, are super shareable, and satisfy just about anyone’s sweet tooth.

I wanted to try something a bit different this go-around, so I headed to Pinterest to find a new-to-us cookie recipe.

Lo and behold, I found chocolate chip corn flake cereal cookies; that’s right, chocolate chip cookies with crunchy corn flakes baked right in, and I knew we had to give our own version a try.

Never one to shy away from adding a bit of crunch to a classic, gooey cookie – like these double chocolate potato chip cookies. Also, I loved the idea of adding cereal to an already perfect chocolate chip cookie.

And since I love chocolate, and bigger mouthfuls of melty chocolate and crunchy cornflakes just felt right. So, I went with chocolate chunks, rather than chocolate chips for these chocolate chunk corn flake cookies.

The combination of gooey, melted chocolate chunks and the crunch the corn flakes cereal provides is a match made in heaven.

Also, we tend to experiment with vegan and dairy-free recipes and desserts. Our oldest daughter has MPIES (milk protein induced enterocolitis syndrome), which basically means she’s allergic to milk. Therefore, I absolutely love trying new to us non-dairy treats, because it truly helps to give our sweet girl more options.

These chocolate chunk corn flakes cookies were delicious with both regular unsalted butter and vegan butter; a.k.a., a mom win in my book!

Chocolate Chunk Corn Flake Cereal Cookies

These delicious chocolate chunk corn flake cookies are made with simple ingredients and result in a truly delightful cookie.

Ingredients

all-purpose flour
baking soda
salt
unsalted butter, softened (vegan butter, like Earth Balance sticks, works great too!)
brown sugar
white sugar
vanilla extract
egg
egg yolk
Corn Flakes cereal
semisweet chocolate chunks

Ingredients

• 2 cups all purpose flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 3/4 cup unsalted butter, softened (vegan butter, like Earth Balance sticks, works great too!)
• 1 cup packed brown sugar
• 1/2 cup white sugar
• 1 teaspoon vanilla extract
• 1 egg
• 1 egg yolk
• 1-1/2 cup crushed Corn Flakes cereal
• 1 cup semisweet chocolate chunks or chocolate chips (vegan chocolate chunks, like Enjoy Life chelate, works great too!)

Instructions

1. Preheat the oven to 325°F. Line cookie sheets with parchment paper or a silicone baking mat.
2. In a medium-sized bowl, stir together the AP flour, baking soda and salt and set aside the bowl.
3. Using a stand mixer or electric handheld mixer, beat together the butter and both sugars in a large bowl until smooth and creamy.
4. Add in the vanilla, egg, and egg yolk and continue to beat on low speed until well-combined.
5. Mix in the already stirred flour, baking soda and salt to the butter/sugar mixture until just blended.
6. Fold in the chocolate chunks and crushed Corn Flakes (I just used my hand to crunch up the cereal as I sprinkled it in) until incorporated into the dough.
7. Using a cookie scoop, drop dough balls onto prepared cookie sheets and sprinkle with a small amount of additional crushed Corn Flakes. Bake for approximately 13-15 minutes, or until cookie edges are very lightly browned. (I found 13 minutes was just right!)
8. Cool on baking sheets for about 10 minutes before transferring to wire racks to cool completely. (That is, if you can’t just dive in to a cookie or two while they’re still warm!)
