Now that I’m a mama (to a very cute, very time-consuming baby girl), I am all about easy homemade dinners. I mean, really easy. Hubby loves pizza, and I love Trader Joe’s pre-made pizza dough (extra easy). So today, Rachel of Sugar-Coated Inspiration is sharing this easy recipe for homemade {whole wheat … though you could easily go with a traditional white crust} caprese pizza with a balsamic glaze.
This pizza makes me feel like a grown-up. It’s pizza, with basil, fresh mozzarella, tomatoes, and a glaze … so it’s fancy.
CAPRESE PIZZA ON WHOLE WHEAT CRUST
Serves 2 to 4
INGREDIENTS FOR THE PIZZA
Store bought whole wheat pizza dough (Trader Joe’s has a good one)
Flour (to roll out the dough)
Store bought pizza or marinara sauce
Shredded mozzarella cheese (8 oz)
1 large, fresh tomato
1 ball of fresh mozzarella
A few springs of fresh basil
Olive oil for drizzling
Salt & pepper to taste
INGREDIENTS FOR THE BALSAMIC GLAZE
½ cup balsamic vinegar
2 ½ tbsp. brown sugar
(Grated Parmesan & red pepper flakes for garnish)
DIRECTIONS FOR THE PIZZA
Roll out the pizza dough with a bit of flour, and shape it into a circle. Place it on a baking sheet. Cover the dough with marinara sauce and shredded mozzarella.
Next, cut the tomato and fresh mozzarella into thin, round disks and place them evenly on top of the shredded mozzarella — place a few springs of fresh basil on top as well. Finally, drizzle the pizza with a bit of olive oil and sprinkle with salt & pepper.
Bake the pizza according to the instructions on the store bought dough.
DIRECTIONS FOR THE BALSAMIC GLAZE
While it bakes, place ½ cup balsamic vinegar into a small saucepan on medium heat. Add in the brown sugar, stir, and let it simmer & reduce for about 20 minutes. Once thick enough to coat the back of a spoon, remove the glaze and drizzle it lightly on the finished pizza.
Allow to cool just a bit and sprinkle with parmesan and/or red pepper flakes (optional, of course).
