Throughout the holiday season there are so many perfect excuses to brunch! And goodness knows I love any excuse to throw a simple and fun breakfast or brunch. For starters, brunch is EASY. You can pull together a few store-bought items, or make or bake one or two yummy, carb-laden dishes, scramble up some eggs, and you’ve got yourself a brunch!
I’d been seeing a trend going around Instagram where you cook a refrigerated cinnamon roll in a mini waffle iron, and the result is a warm, soft on the inside, crunchy on the outside, cinnamon roll waffle in minutes. I was captivated … and determined to recreate the brunch treat ASAP.
Because I knew I wanted to share how we brunch during the holiday season, the cinnamon roll waffles, along with a few other brunch must-haves, seemed like the perfect fit.
This super easy brunch spread is absolutely perfect for the morning after Thanksgiving, Christmas morning, or the morning after New Years Eve .. because this at-home brunch couldn’t be simpler to put together.
First things first, I went to our local Star Market here in Boston to gather up all of our brunch supplies. We love our local Star Market both because they have everything we need at a value and because Star Market offers Grocery Delivery and Pick Up for convenient ways to shop, making my day-to-day as a busy working mom much more manageable when it comes to groceries.You can also find these exclusive brands at the Albertsons Companies family of stores, including Albertsons, Safeway, ACME Markets, Jewel-Osco, Vons, Randalls, Shaw’s Supermarket, Star Market, Tom Thumb and Vons.

We also love their Signature Kitchen Cinnamon Rolls because they have no dairy in them (making them ideal for our oldest daughter, Scarlett, who is allergic to milk protein) – which is surprisingly tricky to find with refrigerated cinnamon rolls, Open Nature Grade A Free Range Fresh Large Brown Eggs, and Signature SELECT No Pulp 100% Premium Orange Juice. And I’m a huge fan of Open Nature Unsweetened Non-Dairy Almond Milk. I’ve been hooked since I made these no-bake chocolate chip cookie energy bites (that taste just like cookies!) using the almond milk.
I was also able to pickup bacon and plenty of fresh berries for our at-home brunch.
The girls LOVED getting to use our mini waffle iron and using refrigerated cinnamon rolls, rather than making traditional waffles from scratch, made brunch prep easy peasy (and produced waffles in record time; which the kids were thrilled about!)

How to Set Up Brunch
Cook and serve your at-home family brunch family style.
Set out a big board with serving bowls of eggs, berries, bacon, and a stack of waffles. Arrange a mini drink station as well – juice, soda, coffee milk – plus straws and cups and mugs. Be sure to have a stack of plates, utensils, and napkins, so that everyone can fill up their plates and dig in around the table!
