Ever heard of “Meatless Mondays”? It’s a new trend in home cooking, in an effort to save money and the planet (plus a few added health benefits, of course), and our family is jumping on board. I’ve always tried to sneak in a vegetarian meal here and there (I love them, hubby is usually left wondering where the meat is). Luckily, thanks to the Meatless Mondays movement, so many amazing food bloggers have started sharing recipe after recipe, minus the meat. And having a day each week to focus my vegetarian culinary skills makes for easier meal planning and yummy Mondays.
