Of all of the chili recipes out there, this white chicken chili is our family’s most loved. Not only is this healthy white chicken chili super flavorful and a total crowd-pleaser, it’s easy to make and is pretty much foolproof. Our Favorite Easy White Chicken Chili Recipe (That’s Delicious and Healthy!)
This white chicken chili is one I’ve been making for years – mostly from memory (the sign of any great and well-loved recipe) – and for so many gatherings and parties. Any time I need to feed a crowd, this white chicken chili is the recipe I use again and again.
It also makes for the perfect family dinner and I’ll often make enough to produce plenty of leftovers; a.k.a., lunch the next day (so helpful now that the girls and I are home for school and work).
Not only is this white chicken chili super flavorful and a total crowd-pleaser, it’s REALLY easy to make and is pretty much foolproof. Oh, and our kids love it, which is saying something.
This really is one of our favorite soup recipes, and for good reason. The chicken cooks down and becomes so tender, white beans pack extra protein, the corn and salsa add a subtly sweet note to the fragrant broth, and the addition of cilantro and lime elevates this chili to something bright, hearty, rich, and a little bit out of the ordinary.
We serve our white chicken chili with corn chips, avocado, sour cream, cilantro, lime wedges, and shredded cheese, and everyone creates their own perfect bowl of chili.

Easy White Chicken Chili
What You’ll Need
boneless skinless chicken breasts, chopped (We like Open Nature Boneless Skinless Air Chilled Chicken Breasts)
medium onion, diced
garlic cloves, minced
olive oil
chicken broth (We like O Organics Organic Chicken Broth)
white beans (We like O Organics Organic Cannellini Beans and White Beans)
frozen corn
container of salsa, fresh or jarred (We use mild, but if you like spice, use medium)
fresh cilantro
salt
Toppings: Shredded Cheese (like Lucerne Dairy Farms Dairy Farms Mexican Style 4 Cheese Blend Rustic Cut), Sour Cream, Corn Chips or crushed Tortilla Chips, Cilantro, Lime Wedges
How to Make the White Chicken Chili
In a Dutch oven or heavy bottom over low heat, sauté onion and garlic in the olive oil until the onions are somewhat translucent. Add in the raw chopped chicken (I use kitchen shears to cut up the chicken breast into small pieces) and cook until the chicken is cooked through.
Stir in the broth, salsa, beans, and corn, and a handful of cilantro; bring to a boil and then reduce heat to low.
Season with salt and allow to cook on low until you’re ready to serve and eat. I love soup that has plenty of time to simmer, so I typically let the soup cook on low for about 1 to 2 hours before serving.
Can you freeze white chicken chili?
One of the great things about making a big batch of chili is that you can freeze it! Sometimes I’ll double this recipe when making it just to have the leftovers for another night of dinner.
Chili is a great dish to make ahead and freeze. Just be sure to store your soup in an airtight container before freezing. Just re-heat it on the stove top and you’ll have your favorite soup in no time!
