Light, fluffy, and easily our favorite pancake recipe, these birthday blueberry pancakes, bursting with fragrant Maine blueberries, are epically delicious. These pancakes are also incredible plain, with chocolate chips, or any other favorite mix-ins. (They‘re also the perfect celebratory pancakes!)
Happy birthday to me! (Because yes, today is my birthday!) And we’re in Maine, on the ocean, and it’s basically perfection. Oh, and hubby used our favorite pancake recipe to make Maine blueberry pancakes and I’m just in heaven over here. So I thought I’d share the oh-so-good recipe so that you all can share in my pancaked out bliss! 😍
Birthday Blueberry Pancakes
This recipe for birthday blueberry pancakes uses our go-to pancake recipe. The pancake recipe to beat all other homemade pancake recipes. And trust me, we’ve tried MANY. (We’re basically pancake connoisseurs over here … which basically translates to ‘carb-obsessed breakfast fanatics.”
Oh, and we added those teeny tiny Maine blueberries that burst in your mouth with every fragrant bite and cook into the pancakes all sweet and jammy-like and I’m pretty sure I’ll be eating leftover pancakes for breakfast, lunch, and dinner today.
Homemade Pancakes Recipe
I’ve said it before, I’ll say it again: I have been making my own homemade pancakes from scratch for years now and let me tell you, it is SO simple and so worth the few extra minutes of effort.
I mean, don’t get me wrong, a boxed pancake mix is fine, the pancakes are just not amazing. Plus, our oldest daughter, Scarlett, has a milk protein allergy, and oddly enough, every boxed pancake mix we’ve found has some kind of trace milk powder in it, which obviously won’t do. I like knowing exactly what I’m putting into our kids’ food, and pancakes happen to be surprisingly easy to make. So, we make our own homemade pancakes.
The trick for super easy homemade pancakes is all in the frying pan. A good non-stick pan makes things SO much easier. We recently bought two GreenPan Venice Pro frying pans and I am completely in love. NOTHING sticks to these babies!
Blueberry Pancake Ingredients
- all purpose flour
- baking powder
- sugar
- salt
- cinnamon
- milk (or milk substitute — we like almond milk)
- eggs
- vanilla extract
- oil
- 1/2 to 1 cup fresh or frozen (and thawed) blueberries*
*We LOVE Maine blueberries because they’re tiny and so fragrant and yummy. You can actually buy wild blueberries frozen in most grocery stores too! Just be sure to thaw and drain them before adding the blueberries to your pancake batter.
How to Make the Perfect Pancakes
First, you’ll add the dry ingredients in a medium bowl and whisk together.
Next, add the wet ingredients to dry ingredients and mix until combined and smooth. Once combined, add in your blueberries (or whatever mix-in you choose) and gently incorporate.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Serve with powdered sugar and syrup!
Customize Your Pancakes
One of the great things about making pancakes is that once you make your pancake batter, you can go wild mixing in your favorite add-ins.
Blueberries not your thing? How about chocolate chips? Or Sprinkles? Or classic plain pancakes. They’re all amazing.

Storing Leftover Pancakes
I LOVE when we have extra pancakes, because they’re so easy to freeze in an airtight container or zip-top bag. I then take out a couple at a time and toast them back up during the week for easy, on-the-go breakfasts.
