I may or may not be guilty of snacking on these long before they make it to the dinner table.
Plus, the dish is both vegan and gluten-free, making it the ideal side dish or appetizer.
Truthfully, I’m not sure what took me so long to give these a try, but goodness, now that I have, I’m never going back. I may very well have to crispy smash everything. (Crispy smashed Brussels sprouts, I’m coming for you.)

A Few Tips for Making the Very Best Crispy Smashed Potatoes
Go for small potatoes. The smaller varieties allow for more crispiness; making them extra delish. The most popular small potatoes are available in red or yellow/gold, and both taste absolutely delicious when cooked with this method.
Use a large baking sheet. You’ll want a large baking surface to give all the potatoes room to bake and crisp. You can always use two pans instead of one.
Line the baking sheet with parchment paper and then generously brush the parchment paper on the baking sheet with olive oil. (You can do this directly on your sheet pan, but it’s a messier cleanup.)
Be sure to top your potatoes with a little garlic powder and/or onion powder. Both flavors add just the right punch to your crispy smashed potatoes.
