Sweet and Salty No-Bake Peanut Butter Oatmeal Energy Bites

Instructions

  1. In a medium bowl, add all of the ingredients and stir to combine well. The mixture should be sticky. Refrigerate the mixture for at least 30 minutes.
  2. Once, chilled, scoop about a tablespoon of the cookie ball mixture into your hand and roll into a ball. Repeat with remaining mixture, which should yield about 12-14 energy balls.
  3. Store in an airtight container and keep refrigerated for up to 1 week, or in the freezer for much longer.

Notes

Optional: add in things like toasted coconut flakes, chocolate chips (we use and love these dairy-free chips), chia seeds, flax seeds (you can grind them up in a food processor or buy them ground), etc.
