Simple Caprese Skewers with Balsamic Glaze
Ingredients
- cherry or grape tomatoes
- mini fresh mozarella balls; or whole fresh mozarella, cubed (drain and pat dry before adding to your skewers)
- fresh basil leaves
- balsamic glaze (or one cup of balsamic vinegar, reduced to a glaze)
- olive oil
- salt + pepper
NOTE: You'll also need regular-sized toothpicks.
Instructions
- Using your toothpicks, assemble one mozarella ball, a small piece of rolled up or folded basil (so that it stays on the toothpick), and a tomato. I like to nestle the basil between the mozarella and tomato so that it stays put.
- Arrange your finished skewers on a platter, drizzle with a little olive oil, balsamic glaze, and a sprinkling of salt and pepper.
- OPTIONAL: To make your own balsamic glaze, add one cup of balsamic vinegar to a sauce pan over medium heat. Once it comes to a boil, set on simmer for about 10-15 minutes until it reduces to a syrup consistency. (Basically, once the vinegar is reduced to half its volume.) You can check on the consistency by dipping a spoon into the balsamic glaze and if it covers the back of it, it's done. Remove from heat and allow to cool before topping your skewers.
