Chocolate Peanut Butter Oatmeal Cookie Bars
Ingredients
- cups old-fashioned or rolled oats
- 1/2 cup milk (milk substitutes like soy and almond work great too)
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup butter (you can also substitute out a vegan butter like Earth Balance)
- 1 cup creamy peanut butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 3/4 cups all-purpose flour
- 1 package chocolate chips, 2 cups - (milk chocolate, semi-sweet, or dairy-free Enjoy Life Chocolate Chips all work)
Instructions
- Preheat oven to 350 degrees F. Grease a large rimmed sheet pan or jelly roll pan.
- In a small bowl, stir together oats and milk. Set aside so that the oats can start to soften.
- In a medium mixing bowl, cream together the brown sugar and white sugar and the butter until fluffy.
- Add peanut butter and mix well.
- Beat in the eggs one at a time.
- Add vanilla and stir.
- Mix in flour and baking soda.
- Mix in the oat and milk mixture. The batter will be sticky.
- Spread batter into greased pan. Bake for 20-25 minutes. The cookies should be lightly golden but not too dark.
- Melt the chocolate chips in a microwave-safe bowl by heating every 30 seconds, and stirring between each interval. It will usually take about 60 - 90 seconds total to melt the chips.
- When the bars come out of the oven, pour and spread the melted chocolate evenly over the top with a spatula.
- Allow to cool before cutting into squares.
