Chocolate Peanut Butter Oatmeal Cookie Bars

  1. Preheat oven to 350 degrees F. Grease a large rimmed sheet pan or jelly roll pan.
  2. In a small bowl, stir together oats and milk. Set aside so that the oats can start to soften.
  3. In a medium mixing bowl, cream together the brown sugar and white sugar and the butter until fluffy.
  4. Add peanut butter and mix well.
  5. Beat in the eggs one at a time.
  6. Add vanilla and stir.
  7. Mix in flour and baking soda.
  8. Mix in the oat and milk mixture. The batter will be sticky.
  9. Spread batter into greased pan. Bake for 20-25 minutes. The cookies should be lightly golden but not too dark.
  10. Melt the chocolate chips in a microwave-safe bowl by heating every 30 seconds, and stirring between each interval. It will usually take about 60 - 90 seconds total to melt the chips.
  11. When the bars come out of the oven, pour and spread the melted chocolate evenly over the top with a spatula.
  12. Allow to cool before cutting into squares.
