Caprese Salad
Ingredients
- fresh mozarella (at least 1 pound), sliced (or fresh mozarella balls)
- fresh tomatoes (3 large vine-ripe tomatoes), sliced (or smaller tomatoes, like grape and cherry tomatoes, cut in half)
- fresh basil leaves (20 to 30 leaves; about 1 bunch)
- extra-virgin olive oil, for drizzling
- balsamic vinegar or balsamic reduction, for drizzling
- course salt and pepper, to taste
- optional: olives, peeled roasted red peppers, roasted garlic, grilled asparagus, etc.
Instructions
- Arrange alternate slices of tomato and mozzarella cheese slices on a large, shallow serving platter. If you're using mozarella balls, get creative, and arrange in whatever pretty way you like!
- Add in any optional ingredients like olives, peeled roasted red peppers, roasted garlic, grilled asparagus, etc.
- Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, and drizzle with olive oil and the balsamic reduction. Serve immediately.
