Double Chocolate Potato Chip Cookies (Perfect for a Summer Picnic!)

Now that the weather is finally starting to warm up, I’m breaking out our picnic basket, stuffing it with goodies, including the most amazing double chocolate potato chip cookies, and heading to the beach. We like to keep our picnics simple: chips or bread, cheese, nuts, plenty of fruit, sometimes I’ll mix in hard-boiled or deviled eggs, and an easy-to-throw-together cookie or dessert; a.k.a. finger food. We also bring hats, a blanket, throw or scarf to sit on, sunscreen, and a few shovels and buckets for Scarlett.

We recently discovered Jordan Lake here in Durham, and although it is technically a lake, there are seven sandy beaches scattered throughout the 14,000-acre property. It’s probably the closest I’ve felt to home since being here in North Carolina and I relished every second of the warm shoreline. I’m guessing it will become our new favorite summer hangout, and so, easy picnics will most definitely be on the agenda all summer-long.

As for the double chocolate potato chip cookies, you’d be amazed at how simple this decadent dessert is to throw together. And for the record: this recipe was adapted via a recipe I found and re-created years ago here on the blog, aptly named the “Win Friends and Influence People Cookies“; so that should tell you everything you need to know. (You’ve gotta admire my 2011 photography skills!)

I added the LAY’S® Classic Potato Chips component because I can’t get enough of the salted dessert trend, and classic potato chips just scream “summer” to me. Trust me on this one: that sweet and salty crunch on each bite is pretty incredible. You can taste that subtle chip crunch on the finish and it feels like potato chips and double chocolate anything were just meant to be.

How to Make Double Chocolate Potato Chip Cookies

Makes about 48 cookies

INGREDIENTS

1 & 1/4 cups all-purpose flour
3/4 cup unsweetened cocoa
3/4 teaspoon baking soda
1 teaspoon salt
2 sticks unsalted butter (1 cup), softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 & 1/2 teaspoons pure vanilla extract
One 12-ounce package semisweet or bittersweet chocolate chips (2 cups)
2 cups of crumbled LAY’S® Classic Potato Chips

DIRECTIONS

  1. Preheat the oven to 375°F. Position the racks in the upper and lower thirds of the oven.
  2. In a medium bowl, whisk together the flour, cocoa, baking soda, and salt.
  3. In a large bowl, with a mixer on high speed, beat the butter and sugars until light and fluffy; about 4 minutes.
  4. Beat in the eggs, one at a time. Mix in the vanilla until combined. Add the flour mixture and combine thoroughly. Stir in the chocolate chips and crumbled Lay’s potato chips and mix once more.
  5. Drop rounded tablespoons of the mixture onto un-greased baking sheets about 2 inches apart. Bake for about 8 minutes, until puffy and the bottoms are golden brown.
  6. Allow to cool on baking sheets about 2 minutes, then transfer potato chip cookies to wire racks to cool completely.

12 Pretty Little Summer Dresses

Once the summer heat sets in, temperatures can be pretty brutal on fashion. Style gets compromised for comfort, because let’s face it, no one wants to sweat in a brand new outfit. Lucky for us, season after season, pretty little summer dresses always come back, and this season, there are some seriously cute contenders. I’m loving feminine, lightweight dresses that feel just a little more special than the norm and/or have the right flattering cut to battle any day, but are casual enough to throw on with a pair of flat sandals and be out the door.

By the way, this dress, at just $34 is an awesome casual basic that you’ll wear all Spring and Summer long, and transitions really easily into Fall over a pair of leggings or tights. (I have it both in black and the striped version, and because it’s so flowy, it works really well as a non-maternity maternity dress too. For reference, I wear a medium, and it runs big.)

Exploring Durham: Strawberry Picking at Waller Family Farm

If you follow along here on the blog or on social media, you’ll know that hubby and I are big fans of exploring our new home and the surrounding areas here in Durham. Because hubby works a lot (you can read more about the life of a medical resident here), we try to carve out special events and fun things to do when he does get a day off here and there. Strawberry picking has been high on my “to do” list since moving to North Carolina, and we finally had the chance to sneak away for a bit to visit the much talked about Waller Family Farm to pick strawberries.

Waller Family Farm is a real working strawberry, vegetable, chicken, and cattle farm right between Durham and Chapel Hill. I was amazed at how convenient the farm was to us, and how easy it was to find, nestled into a few beautiful neighborhoods in Durham.

By the way, strawberry picking at Waller usually starts around the last week of April, and goes through May and into June.

Although plenty of people came out to the strawberry farm over the weekend, Waller has it down to a system, and we had free reign of a couple of rows to pick away.

Scarlett was in heaven – seriously, it was like she hit the strawberry lottery – and basically spent the whole time eating as many strawberries as we could pick.

After we picked plenty of strawberries, we explored the farm grounds and Scarlett was thrilled to say “hi” to the cows and the chickens.

Happy Friday/almost-weekend! It’s been a super productive week and I’m hoping to keep the momentum going. I have three fun styled shoots coming up in the next few weeks – keep an eye out on insta stories to catch a few behind-the-scenes glimpses – so I’m hoping to really dive into the planning this weekend. The new site design is also coming together and I think you’re going to love it. Scarlett is eagerly awaiting summer camp so she can wear her new summer shoes (glitter jellies that we bought a few weeks back) and baby number two is growing at rapid pace in my belly. Thankfully, we’ve entered the “good stretch” of pregnancy, where I finally feel like myself again. Mostly. I also know that in a few months time, I’ll be drowning in dirty diapers and exhaustion, so I’m a busy bee until then trying to get everything done. I’ll be sharing what we’re up to throughout the weekend over on instagram (lots of fun behind-the-scenes on my insta stories too!), facebook, and twitter. Follow along! How about you? How to Make a Real Flower Crown

Ohhhh, today’s post is a good one! I like flowers, guys. A lot.

You may remember that I teamed up with a fabulous florist, Marsha of MEWS Designs, and my amazing photographer, Annie of Annie Watts Photography, to create a couple of fun DIY flower projects to share with you all! (You might recall this easy peasy tutorial for creating your own Spring arrangement?) Well, we have a pretty awesome DIY post to share with today: how to make a real flower crown.

How to Make a Real Flower Crown

Flower crowns are everywhere. They’re beautiful and whimsical and make everyone look ten times prettier. After we made these flower crowns, Scarlett and I wore ours around the house all night long. Princess status.

I’ve made faux flower crowns before (you can get that DIY here), but I loved the idea of creating a handmade real flower crown with fresh flowers, and Marsha was happy to play teacher. There’s something about a real flower crown that looks so delicate and festival-ready. And maybe it’s fun to pretend you’re a fairy or a princess or a garden sprite. Whatever the occasion, after you see these pictures, you’ll definitely want to make your own real floral crown.

MAKE YOUR OWN REAL FLORAL CROWN

WHAT YOU’LL NEED:

Floral Tape
Shears/Clippers
Scissors
Floral Wire (try to choose one that is thick and flexible)
Floral Adhesive such as Oasis Floral Glue (optional)

Flowers Used: Miniature Gardenia leaves, Lambs Ear, Eucalyptus, Ivy, Winter Daphne Blooms

DIRECTIONS (with pictures)

Begin by measuring the rough circumference of your head with the wire and create a “hook” on each end of the wire. (These will hook together at the end to keep and hold your crown in place on top of your head.)

Pick up and bunch together a small group of flowers and greenery and place against the wire just before one of the “hooks.”

Using floral stretch tape, wrap the tape around the stems while tugging slightly to stretch the tape and secure your small bunch of flowers to the wire.

Continue to place a small bunch next to the previous one, wrap with tape to secure, until you have completed the length of the wire.

You’ll be surprised how quickly and simply this process goes!

At this point you may go back and glue in larger flowers with floral glue; just a small dab on both the flower and where you plan to place it will do.

Florists Trick: Blow on the glue in both places for a few seconds before placing the flower on the crown. This will help them adhere to one another.

Once completed you can tie ribbons to the back (at the end of each “hook”) if desired.

Though I’ll admit, I loved the simpler flower crowns best of all.
