Strawberry Watermelon Prosecco Spritzers

Nothing says summer quite like a watermelon spritzer, so when Riondo Prosecco asked me to create a fun way to experience summer with their Prosecco, I knew I had to bring the summer spritzer (with a twist) to life. I’d been wanting to create a fruity giant ice cube, and using them to chill one of my favorites – a sparkling prosecco – seemed like the perfect summer cocktail.

I adore the idea of your flavored ice cube slowly melting into your drink in the summer heat. And let me just say, the result was a drink that tasted sweeter and sweeter with every sip, without being overpowering.

And I mean, can we talk about these large ice cube trays? I found these silicone trays and fell immediately in love. They’re BPA free and super easy to use (the silicone makes it so that your ice cubes pop right out with not much effort), and they make these amazing giant ice cubes.

To make the ice cubes, I just poured fresh watermelon juice into the ice cube trays and sliced a few ripe strawberries into each cube, and then froze the tray. Once the cubes were frozen, I popped two in each glass and topped them with prosecco. The result was SO yummy, and the perfect easy summer refreshment.

Strawberry Watermelon Prosecco Spritzers

INGREDIENTS

Fresh Watermelon Juice (you can typically buy this in the refrigerated department of the produce section at your local grocery store)
Sliced Strawberries
Mint (optional)
Riondo Prosecco

DIRECTIONS

  1. Pour juice into your ice cube tray, about 2/3 of the way.
  2. Sprinkle in sliced strawberries or any other berries. You can also add mint.
  3. Carefully place the filled trays into the freezer and allow to freeze completely.
  4. Once frozen, and you’re ready to pour yourself a cocktail, fill a glass with two ice cubes and top with Riondo Prosecco. Easy peasy!
